I recently shared a TigerNut recipe for horchata (dairy free milk). With the leftover pulp, I decided to dehydrate it in my oven to make flour. It was a no brainer that I had to bake cookies with it. Here's a simple #glutenfree
ingredient list below. Once you combine it all, place about 1 tbsp full of the dough over parchment paper on a baking sheet, and press into your desired cookie shape. Bake at 350 for about 10 minutes. The best part was drinking a glass of my homemade horchata with the cookies 😍
