) here with the second batch meal! Pork tacos with broccoli slaw, coconut crema and pineapple. I almost always crisp up my pork first. I love the texture, flavor and all the delicious brown bits!
I also prepped broccoli slaw last night. I'll use some on the tacos and some on my sweet potato buns with chopped chicken later.
Broccoli slaw recipe adapted from @theemancipatedepicure
2 packages broccoli slaw
3 Tbs. olive oil
4 teaspoons balsamic vinegar
4 teaspoons lemon juice
2 teaspoons onion powder
1 teaspoon salt
Whisk all ingredients except slaw together, add slaw and mix. .
For 8 tacos:
3 cups of prepped pork, chopped
2 Tbs. coconut or avocado oil
Add oil to warmed pan and add pork. Add garlic salt to taste (about 1 - 1 1/2 teaspoons). Cook and stir until brown and crispy bits form.
tortillas, add pork, top with broccoli slaw and coconut crema! Put some precut pineapple on the plate and you're all set. A delicious AIP dinner on the table in 14 minutes (I timed it)!
