Carrot Ginger soup - no surprise that something this good comes from the masters. Similar steps to the pumpkin soup I posted yesterday - soften onions, fresh ginger, crystallized ginger, and garlic, then add 2 lb carrots, carrot juice, water, thyme and simmer. The secret is doubling down - fresh AND crystallized ginger, carrots AND carrot juice. Luckily, you can buy crystallized ginger in the bulk section of @fairwaymarket
