Back from vacation! We had an amazing family trip where we spent every day with my parents, sister and her family. Nothing more amazing than being all together, watching the kids play together and spending quality time with each other. Always good to be home but I definitely have the vacation blues :( I made one of the easiest and most simple dinners which was also truly one of the most delicious. Healthy, low in fat and carbs, full of protein and fiber. Little prep and easy cleanup. Grilled shredded cabbage topped with zahtar and black pepper grilled chicken with tomatoes and a spicy tahini dressing. The meal ended by my husband and I debating whether or not we should lick our plates 🤔
For the cabbage: either thinly slice and shred your own cabbage or buy pre shredded. Throw on a hot grill with a little non stick spray or oil. Season with salt. Let it cook on one side for a few minutes then toss and cook the other side. Viola!
For the chicken- season with zahtar seasoning, cracked black pepper and salt. Grill a couple minutes on each side.
Tahini sauce- tahini, cold water, freshly squeezed lemon, sriracha, salt, black pepper. Mix well
